Under the direction of the Executive Chef, manage food service operations for designated location(s) within code guidelines of the City, County, State and Federal regulations in a professional manner that provides quality diversified meals, safeguards the health of all customers, and projects the image of a customer-oriented organization.
1.Provide support to the Executive Chef in managing assigned food service personnel to maximize productivity, efficiency and the potential of the human assets of Tulsa Tech, including: directing job assignments, monitoring staff performance, coaching, counseling, training, assuring compliance with regulatory requirements and organizational mission, values, policies and work rules.Appraise performance and provide recommendations for staff compensation, promotion, and termination actions, and hiring as appropriate.
2.Communicate effectively with direct report Culinarians, students, campus employees,internal customers, and external customers to maximize customer service, efficiency, and productivity. Participate in interviewing, selecting, training and developing staff.
3.Maintain accurate and timely records regarding food service operations and administrative documents regarding personnel management. Provide reporting as required and directedby the Executive Chef.
4.Notify Executive Chef of any variances in production, personnel issues,inventory requirements and general kitchen operation.
5.Accurately account for all cash transactions, counting money exchanges, reporting sales, preparing bank deposits, and serving as cashier during designated food serviceperiods.
6.Work closely with Executive Chef and Culinary Instructors to provide hands on work experience for Culinary students andinterns.
7.Coordinate administrative details, food preparation, transport and set-up of catered events and off-site services to assure customersatisfaction.
8.Produce high quality dishes that are compatible with the district's menu standards and customerrequirements.
9.Assist Executive Chef in procuring supplies needed for operation of the food service and maintain an accurate inventory with minimal waste. Inspect incoming food and supplies and assure proper storage.
10.Supervise and assist as necessary in clean-up of food preparation, service and servingareas as required to efficiently maintain a healthy and attractive environment.
11.Perform tasks and duties relevant to any of various roles or responsibilities assigned by supervision and determined by management to be appropriate for this position; comply with all policy, procedure, regulation and other communicated requirements as may be in effect for the workgroup or worksite.
This position requires three years working as a Sous Chef. Professional catering experience is also required.
Tulsa City County Food Service Managers Certification and/or ServSaf Certification.
Knowledge of food cost accounting and food sales reporting
Knowledge of culinary arts, including food recipes and preparation methods
Basic knowledge of Microsoft Outlook, Excel, and Word
Education High school diploma or equivalent required.
Salary Schedule SPMS
Hiring Range Dependent on experience and education, plus additional $6,600 annual compensation for salary-in-lieu of dependent benefit coverage.
